1 bottle (8 ounces) of Italian dressing
½ teaspoon of Italian seasoning
½ cup of mayonnaise
1 loaf of Italian bread, sliced lengthways
6 dill pickle slices
2 tomatoes, chopped
In a medium bowl, place the chicken drums together with ½ of the Italian dressing. Toss together and marinate for a minimum of 1 hour.
Hint: For best results leave overnight!
Place the chicken on a rack in broiler pan. Broil 6 inches from heat, turning frequently and brushing with remaining ½ of the Italian dressing. Broil about 30 minutes or until fork tender.
Once chicken is cooked, cool slightly, discarding the skin and bones. Slice chicken into bite-size pieces, placing into a mixing bowl. Add any remaining Italian dressing and refrigerate until chilled.
Mix the Italian dressing and mayonnaise together, spreading onto bread. Top one slice of bread with chicken, pickles, and tomatoes, placing the remaining slice of bread on top and cut into equal sandwiches.
