Chicken Parmigiana Bake

Made with: LillianZ Jumbo Pack of Boneless and Skinless, Breast Fillets

1 cup of cornflour
2 eggs, lightly beaten
2 tablespoons of water
½ cup of seasoned bread, combined with ½ cup of parmesan cheese
4 tablespoons of butter
4 tablespoons of cooking oil


Pound the breast fillets until roughly ¼ inch thick. Place the flour, egg and crumbled cheese mixture into individual shallow dishes.

Coat individual chicken pieces in each dish then place onto a large platter. Preheat the oven to 200°F.

In a wide frying pan, heat the butter and oil. Add half the amount of breasts and sauté until golden brown (3-5 minutes each side). Do not crowd the pan.

Helpful tip: Keep cooked breasts warm in the oven while waiting for the remainder to sauté. Add more butter if needed.

Finally, garnish with a sliced avocado and oranges.
